From the command-line help:

-n, --no-action Do not write to disk
-f, --force Use less caution
-q, --quiet Less output
-v, --verbose More output
-V, --version Display version information
-h, --help Display this help
So, probably just "sudo ntfslabel /dev/disk0s3 'Vista'". Hope that helps.
