I don't own a shuffle only tested them at the Apple Store (and it sounded way better than my 60GB iPod - which was a bit disappointing). In my personal tests I found that the shuffle's audio quality is really very good.

Here's another question for you:
If at another computer, which does not have iTunes installed, and you want to copy data files over but there isn't enough room anymore, is there a way to delete the music files directly from the shuffle to make room for more data? As the music files are in iTunes it wouldn't be a problem to delete all music if more space for data is required for a one-off transfer.
But can this be done without using iTunes?
