My Windows PC is connected to a Canon MPC190 multifunction printer and after some intense googling, I haven't seen much promise in getting Mac drivers so I can print over the network.

I'm wondering... if Windows can already talk to the printer, why should my Powerbook have to? Is there any sort of print serving software I can install so I can use generic drivers on my Mac and have my Windows PC handle all the nitty gritty details?

(I'm running a Powerbook G4 with all the latest and greatest, if that helps)

I don't think that will work. Mac os needs to support the printer I think.
