If you want simple, try an Airport express.

yup, plus you can stream iTunes to a stereo system and have wireless printing.

If she only wants a short range solution, the Airport Express will be fine. If she needs massive range, a cheap 3rd party router would be more effective.

An Express can still cover a decent sized flat. I'll also cast my vote for the AP Express. I got one for my sister and she hasn't been complaining so far.

Are you going to be using it for intranet transfers? I've found that the cheap routers do an awful job with intranet stuff. I've been very happy with my DLink DIR655 even if it was a little more pricey than the cheap ones. It's as simple as any of those but it actually makes intranet wireless transfers bearable. Plus it has lots of other features should you wish to explore them.

one bedroom apartment use...range shouldn't be an issue (i use the airport express at home and have no range issues)

Anything on www.slickdeals.net. Watch it for a few days and you'll see something cheap come up. I highly recommend going with something that runs DD-WRT. The increase in speed of just simple web browsing has been astounding.

Don't bother with that overpriced Apple crap.

This router, Asus WL-520gU DD-WRT Compatible WiFi Router, is very cheap, runs DD-WRT like a champion, and comes with a 10/10 approval from me as I own it.
