I was wondering what everyone thought of how well a single processor (1.8ghz) vs the 2ghz dual processor would be for a server. I would mainly use it just to stream media to never more then 10 people and a webserver, but I also want to be able to use it as a main desktop machine. Would there be a huge benfit in having the second processor? Also would it be worth getting the Mac OS Server and how does that differ compared to the regular OS? or could I get by just with a G4 of some sort?

It should work very well. :)

Remember, Apple sells single-CPU Xserves that aren't much faster than that. If that's all you're doing, I don't think you'll see a huge gain in a dual-CPU model. As long as it has a sufficiently fast hard drive and network connection, a regular G5 tower will be just as good!

I don't think you should spend the extra for Mac OS X Server. The Server software is good particularly for managing lots of users/workgroups, services, multiple domain names, etc. It offers a lot of functionality, most of which you'll never even touch. The regular installation of Mac OS X includes Apache for easy web serving out of the box. Then, you can install QuickTime Streaming Server (http://www.apple.com/quicktime/streamingserver/) and QuickTime Broadcaster (http://www.apple.com/quicktime/broadcaster/) for free.
