Well, to be fair, Apple's specs are rather confusing about this.
If you compare the M1 13-inch and the M1 Pro/Max 14-inch and 16-inch, you get:
500 nits brightness
vs.:
Up to 1000 nits sustained (full-screen) brightness, 1600 nits peak brightness
The "up to" is doing a lot of work here. I think they also cited a figure like that at the event.
But!
Apparently, in very bright environments, the 2021 models will in fact go well beyond the 500 nits you can achieve by manually setting the highest brightness setting.
