For a pro product two USB-C ports would be a little underwhelming. For the Air, no problem. Even if you do use a hub, putting a bunch of high data use devices on the same port might not be ideal. Two would only leave you one for power and one for everything else.
Apple got the last gen Intel Mac Mini right, 6 USB ports (2A + 4 TB/C). M1 was a little disappointing in that regard. Fine, but meh for a desktop. Not the kind of feeling you want users to have.
