Tinker Juarez was a big-gear guy. I remember watching him at a race one year just chugging along up a hill in his 90-tooth or whatever, powering along and getting run over by everyone else (John Tomac made him look silly in those days). I've always been a 90-100 rpm guy, and will use whatever ring/cog ratio that gets me there.

Sure, if you have the skillset for it. Otherwise, don't risk it unless you have the wheel checked out by a pro. Few better ways to kill yourself than faulty wheels.
I never did my own, but I did straighten them myself—just not before I learned how from a pro-builder.
Pro tip: At the shop I used to work at the owner would
give away spoke wrenches. Give them away for FREEEEEEEEE!
