One thing to consider, even after watching all the iPhone / iPad paradigm shifts, especially that the hardware doesn't lend itself to tinkering:
You still have to sell at least one platform capable of building executables for itself and/or other platforms. Since that is necessary, it will also be possible to build and run things yourself on that system, if you so choose. So I don't imagine the "fears" inspired by iPhone OS will manifest themselves in Mac OS X, since it's the development platform for both Mac OS X and iPhone OS.
