For SATA there are four good choices: Best is the Samsung 860 Pro, which was just released last year, not 6 years ago, you might be thinking of the 840 Pro. The 860 Pro maxes out the SATA port 560MB/s read and 530MB/s write. That might not sound great, but unlike cheaper consumer drives it does not bog down when working with high bit-rate 1080p video playback in editors. If you are working with 4k+ files, you're just not going to get great performance. I have the previous 850 Pro from Samsung that came out in 2016, and it is the only SATA SSD to date that I have that didn't bog down in video editors, so I'm sure the 860 Pro is as good or better. If you work with video, go for the Pro.

For anything else the Crucial MX500 and West Digital Blue or Samsung 860 EVO will be more than enough. If it were me I'd get the doubler kit, put a 500-512GB Pro in as a scratch drive and a larger 1+TB EVO/MX500 or WD Blue in for other storage like the boot drive, pictures, etc.
