Sure, but
that knowledge he can't share. Apple can't claim ownership of his personal expertise or bar him from working for a competitor, but he can't export trade secrets, knowingly or otherwise, and competitors would be well-advised to run away screaming from any suggestion that they should base a strategy on his inside knowledge. Taking advantage of the wisdom he's gained, OTOH? That's fair game. But it would be for someone of any corporate level.
