I had some bananas that were about to go rotten, and plenty of time to waste, so I decided to bake a banana cake. I found this recipe for hot caramel banana cake and it was so damn good I thought I'd share it with you Sorry, no pics, most of the cake was gone within 10 minutes
Hot caramel banana cake Caramel mixture 60g butter 1 cup brown sugar (firmly packed) 1/3 cup milk Cake 125g butter 1 1/2 cups castor sugar 2 cups self-raising flour 1 cup milk 2 eggs 1/2 cup coconut 2 large ripe bananas, mashed Extra coconut 1. Combine the caramel mixture ingredients in a small bowl, microwave on high for 2 minutes, set aside. 2. Combine cake ingredients - electronic blender is quick and mixes the banana more thoroughly. 3. Pour into greased and lined 23cm square cake tin. 4. Bake in a 180 degree Celsius oven for 50 minutes. 5. Pour over the caramel mixture. This is hard to do as the cake balloons out in the centre and most of the mixture runs to the side, but try your best to spread it evenly. Sprinkle liberally with extra coconut. 6. Bake for a further 10 minutes. 7. Stand for 10 minutes before turning out. 8. Serve while still warm - YUM!! Anyone come across any other simple, fantastic recipes? |

I'm having egg-in-the-middle for breakfast right this minute. Egg-in-the-Middle: 3 slices bread 3 eggs Take a wine glass and press out a circle in the center of each slice of bread. Remove circle. Spray large pan or skillet with Pam or rub a small pat of butter around. Lay each slice on skillet and crack an egg in the middle of each. Let cook for a few minutes and flip (you can toast the centers too if you like). Make sure the yolks are runny! Serve. Can't get much simpler that that. So it goes. |

709: Sound tasty! I have a similar recipe which I call egg'n'toast in a bowl. I soft boil two eggs and toast two slice, butter it, then tear it up into bite sizes, and put it in a bowl. Add soft boiled egg to the bowl and dash with salt and pepper. Soft-boiling is the tricky part but oh, so well worth it! |

I have emailed this recipe to my wife in hopes that she will surprise me with it!
The only recipe I know it to bring a pot of 2 cup water to a boil, add seasoning packet, add noodles and boil until desired firmness. Continuing with the banana theme, and now we're getting into the barbeque season (for us at least):
Take one banana, split it, cram in some chocolate buttons, attempt to re-seal, chuck on barbeque for half an hour. Delicious! |

I love hot sauce and scrambled eggs. If I'm not making EitM for breakfast I'm making migas. Lots of jalapeños and hot salsa.

Yeah, except mine is essentially a poor boy's breakfast burrito.
But yes, migas are great, especially if you have homemade tortilla left over from yesterday or something like that. Edit: Has anyone else had wooden shoe? Ridiculously easy. |

joveblue - I made the cake last night and it everyone loved it. Only thing was, our oven must be too hot at 180 Celsius over here, b/c it burnt the top layer (which I ended up cutting off before adding the caramel). I'll make it again tonight at 160 or something and see how that fares. Damn, I can't believe, I'm posting about baking a cake on 'an'.

Eh.. our oven is like 30 years old or something so I did actually adjust the temp up... probably should have mentioned that... it was originally 150C I think
One of my friends is into the whole 'egg in the hole' thing. I refuse to believe it tastes any different... |

Epic bump - I've baked this cake so many times and every time I do it gets rave reviews.
My wife jokes that it was my "thesis procrastination" cake. Thankfully those days are behind me; well, for now. Anyway, I baked this yesterday for a "Christmas in July (in August)" work party and it went down a treat. Thanks again joveblue. Btw, I passed on this recipe - hence, the bump today. |
