My teacher was presenting something from his macbook pro (hooked up to a projector) and he asked me if there is a way to alter his mouse cursor so it would either turn red, flash or somehow appear different so he could use it as a pointer to his students to show them something on the projector.

If anyone knows anything on how to do this, or some software to help out with this, please let me know.

He could also try OmniDazzle.

It costs US$14.95 - although there is a free demo which expires after one hour, requiring a relaunch if you want to keep using it.
