I have a 300 GB Seagate Ultra ATA/100 hard drive.

You can buy a SATA->IDE adapter for like $25 bucks. It is a tight squeeze, but may work. A ATA card may also work since the drives are right above the expansion slots. There are also 3rd party drive mounts so you can install more than 2 hard drives in a G5. That might be the easiest solution but also the most expensive.

Firewire enclosures are getting cheaper, and they don't involve doing things inside your G5's case that it wasn't designed to do.
