There are oodles of threads on this. Try the search function.

You can watch the files you rip, just not with QuickTime. Open the .vob file with VLC or MPlayer.

If you want to rip them to a more usable format that QT can handle, you can use FFMPEG (which is ugly and not exactly user friendly) or Handbrake (which rules and can rip to h.264). Ripping to h.264 is very slow but the resulting files look great.

Ripping the video_TS folder does allow to make copies of your DVDs using Toast, just select the DVD from video_TS option in Toast. That's assuming the resulting file you ripped will fit on a standard DVD. Otherwise I think you'll have to use something like Popcorn (also from Roxio) to compress it. I'm not sure on that one though as I've never used Popcorn.

If you want to watch it after ripping, simply use DVD Player or VLC to open the VIDEO_TS folder.

I use Mac The Ripper for ripping (without any troubles), then I use DVD2ONEX to compress them (I get the menus as well) and Toast to burn them.

I´m wondering if I could do all of this with Automator……

Only if MTR and DVD2ONEX both support Automator. Which, currently, neither do.

Is there an alternative to Toast (a.k.a. open source, a.k.a. not $99) program?

Handbrake has worked fine for me (even though I only used it once).

Since I don't have Toast, I use DVD Imager after compressing it with DVD2oneX and them burn the image file in Disk Utility. It's kind of a tedious process, but gets the job done.

I use Mac the Ripper and Popcorn. Popcorn isn't open source, but its cheaper than toast by about $50. Both work well and I've never had a problem with either one.
