I have been trying to 'back up' my dvd with dvdbackup and toast. After I use DVDbackup and create video_ts folder and then add to toast to burn i just have data. What step do I need to do after dvdbackup before I send to toast?

Make sure you select DVD-Video from VIDEO_TS source. Otherwise Toast will create its own menu or assume you want a data disk.

After using DVDBackup do I then have to use DVDoneX2 before Toast? Or can I just go straight from using DVDBackup to Toast?

If you need to compress the files to fit on a single 4.5GB disk, than yea. Otherwise you don't have to.
