iOS devices can't seem to detect the Apple TV to stream to it. The Apple TV is wired and iOS are on the wifi... obviously. The wifi comes from a router that has DHCP desactivated and is plugged into the switches as the other wired PC. So the IP of the Apple TV is 192.168.0.110 and my iOS device is 192.168.0.115, same submask (255.255.255.0).

Duh... It's working on someone else iPhone 5. But my 3GS still can't detect. Yay ! ... Not.

I don't think the 3GS supports Airplay... Could be wrong though.

My 3Gs does AirPlay, but I don't know how to fix your problem

Seems to be on&off. It's detecting it right now without changing anything. I'll wait and see if it drop/stop working.
