Being stuck in the house seems to have a lot of people in the baking mood, as evidenced by the fact that until recently I have not been able to find flour in the stores and had to order 25 lbs direct from a flour mill
Meet Bob. Bob is my sourdough starter. In this jar is a culture of bacteria and yeast. I've been baking sourdough since September and I'm finally getting good at it Look at that open crumb! My most consistent crumb yet, so beautiful! Best part about sourdough? Baking with discard! |

Wow. Those do look awesome. I've note been doing any new projects really since the whole stay at home thing kicked in. Can't say I'm complaining either. I hope to pick up a new hobby in the coming weeks though. I'll find something to do.

So far I've made...
A German apple pancake: Brown butter chocolate chip cookies: Cheddar cheese beer bread: And a blueberry lemon tart: On deck I'll be making a peach upside down cake, banana bread, carrot bread and flour tortillas. The tortillas are for the carnitas I'm making this weekend. Also I live by myself so I will be fat as all fuck by the end of this. |

Gonna be honest, that one upset me. Just before everyone went crazy, I gave my 12lb bag of King Arthur AP flour to my younger sister because I could get it at Costco for $6.00. Then suddenly everyone is a baker and buys up all the flour and I've got 1 1/2 cups of AP left. Luckily I still had a few pounds of bread flour, but I was really upset.
What will really make me mad is if anyone who stockpiled that stuff and lets it go to waste |

Flour can be held for quite a while so long as it is in a sealed container, cool, and dry. And there were no weevils in it to start with.
But, if you want to store it really long term, get yourself a wheat grinder and store your wheat as seed. - AppleNova is the best Mac-users forum on the internet. I've read that flour can be stored for up to a year, maybe two if you freeze it. Less for whole wheat because of the oils.

The idea for long-term use is to grind 10-15 lbs of wheat berries at a time. Wheat berries will store in a cool, dry, sealed container for 10+ years, while ground whole wheat is good for 6-12 months—typically—which can vary with region/environment.

Right, but how many people that bought out the 25lb bags from sam's club are actually going to use that much flour in a year? I just hate to see the waste.

I swear I only bought a five pound bag.
Still haven't been able to find yeast though and I don't think I have the patience to make my own sourdough starter. |

I know a few people who panicked and got those locally, so I'm hoping I can get their leftovers when all of this is done, because my house goes through a 25lb bag every 2 months or so.

I would be stress baking if I could find some goddamn AP flour in the grocery store. Past few times I've checked, always in the morning, it's been cleared out. Or, there's one solitary bag of some borderline useless gluten-free/keto approved flour.

Look up a local mill and see if you can order some. I’m in Minnesota and was able to get 25lbs from ndmill.com for just under $20 after shipping.

It was pretty great.
Since I 1000% do NOT need to eat all these baked goods myself I've started packaging them up and biking around down to drop them off on friends' doorsteps. Nice way to share, plus I get some exercise. And I don't stuff my own face with an entire cake. Monday night I made a big batch of chili and a loaf of cornbread to go with it. Mixed some hatch chilies into the cornbread. Tonight I'm making a batch of flour tortillas. Our CTO gave everyone the day off tomorrow so I'm planning a very lazy, very taco-filled day. Chorizo and egg breakfast tacos in the morning, carnitas tacos for lunch, margaritas pretty much all day long. Should be in the mid 80s and I just got a hammock stand set up. |

Cornbread should only be sweet if you're drunk and can't tell the difference. The thing you REALLY want in cornbread is cracklin'. The *only* legitimate version of cracklins is derived from fatback.
