You simply have to lift your thumb briefly when clicking the "evil" center button. If you slide the thumb towards the center, you'll probably move the selection.
I used to have a Sony MD player, which had one of those clickwheels, and it sucked. Selecting letters when entering song titles took bloody ages. The iPod wheel is much, much better. Okay, it's not perfect, and I also sometimes have to go back because I slipped on the wheel while clicking. But other than that, it's really pretty good.
EDIT: If they really extend the screen so there's no more room for a clickwheel, they will have to come up with something new anyway. A "virtual clickwheel" makes no sense at all, because a) you smear finger grease all over your display, and b) doing the "slide and click" is much less obvious, and there is no tactile feedback for it.
